Chicken in Soy Sauce With Sweet Potatoes

Made another PACHAM today. It tastes like ESCABECHE, ADOBO and AFRITADA haha. It looks uninviting (forgive the low quality picture) but in all fairness, I think it tasted good-- sweet, sour and salty.

I like to use CAMOTE (sweet potatoes) as a substitute for potatoes, they're less expensive and compliments nicely with soysauce based dishes. 

Chicken in Soy Sauce With Sweet Potatoes 

Ingredients:
1 Kilo of chicken breast, sliced
3 large sweet potatoes, cubed
1 Red bell pepper, sliced
1 Onion, sliced
1 can of small RENO Liver Spread

For the sauce:
Combine 1/2 cup of water, soy sauce, vinegar, corn syrup and pepper in a separate bowl

Preparation:
Fry the sweet potatoes until golden brown, set aside
Saute the onion, chicken breast and RENO liver spread altogether
Pour in the sauce
Add the sliced bell pepper
Wait until it boils then add the fried sweet potatoes

Serve hot and enjoy!

Chicken and Pineapple Curry

INGREDIENTS

1/2 kilo of chicken (tinola cut)
1 big can of Carnation evap milk
2 medium sized potatoes, cubed
2 carrots, cubed
1 bell pepper, sliced
1 cup of fresh pineapple, sliced
1 onion, sliced
Garlic 

2-3 tbsp of curry powder
1/2 tsp of chili powder
1/2 tsp of paprika powder
Salt and pepper

PREPARATION

Saute chicken in garlic and onion
Mix curry powder, chili powder and paprika in a separate bowl with a little water
Pour the mixture in the chicken, cook to until the chicken absorbs the flavor
Add carnation evap
Add in the potatoes, carrots and bell pepper
Cook until potatoes are tender
Add in the sliced pineapple
Season with salt and pepper
Serve hot and enjoy!

I wanted to cook chicken galantina actually but I don't have the rest of the ingredients at home...so I just cooked Chicken curry with chili and paprika powder and added some pineapples! It tasted good! My sister approves.

Pineapple Chicken with Sambal Sauce

Here's another pacham I'd like to share...inspired by the korean dish chicken galbi (stir fried chicken). I used sambal sauce instead of hot pepper paste (gochujang). Just finished cooking it a few mins ago...and it tasted good, I think. :) It's sweet and spicy and yummy!

INGREDIENTS
1/2 kilo of chicken, adobo cut
1 small pack of Del Monte pineapple chunk
Onion, Tomato, Garlic
Ginger, grated
Jalapeno chili, sliced

Sauce:
4 tbsp soy sauce
2 tbsp vinegar
1 tbsp sesame oil
1 tbsp brown sugar
1 tbsp honey
1 tbsp sambal sauce

PREPARATION:
Marinate chicken in ginger for at least 30mins to eliminate the smell
Saute chicken in garlic, onion and tomato
Add chillis
Mix all the sauce ingredients in a bowl and mix well
Add the mixed sauce
Allow to cook for 5mins
Add half cup of water
Cook until the sauce is reduced
Add pineapple chunks including the syrup

Serve hot and enjoy!!!

Sauteed Chicken and Apple Recipe


Looong timeeee no blog! Well well well...I wasn't really busy these past months, I just don't feel like blogging because no one blogs anymore!!!

Anyway, here's another pacham recipe I'd like to share. First time I tried using apple in a dish. I cooked this last NY at home and it tasted ok (just don't match this with rice). Enjoy!

 
Chicken and Apples

Ingredients:

Chicken breast
Apples (sliced)
Apple juice
Lots of White onion (sliced)
Garlic (chopped)
Thyme
Salt and Pepper
Oil / butter

Saute chicken breast in oil/butter, fry until slightly brown
Add garlic and onion (do not overcook)
Add salt and pepper
Add apple juice (unsweetened)
Add the sliced apple
Add thyme

Chicken Mushroom With Broccoli

Here's another easy and yummy chicken recipe I'd like to share. I cooked this yesterday and it turned out...edible. Lols. Modesty aside, I think it turned out yummy. It's easy to do, healthy and yes, wont hurt your pocket.

 

Ingredients:
1/2 kilo of Chicken strips / fillet
Broccoli worth 40P (I bought in Quiapo market so it's cheaper)
1 small can of mushroom
Ginger, thinly sliced
Soy sauce
3-4 tbsp Cornstarch

Preparation:

- Blanch or steam your broccoli. I steamed my broccoli along with rice, I just used a steam pan placed on top of my rice cooker, this way it'll be cheaper and easier - no need to boil and drain water. Let it steam for 1 min, then pour cold water on them so they'll retain their perfect green color.
- Marinate chicken strips/fillets in soy sauce and ginger
- Add 2-3 tbsp. of cornstarch on your marinate, blend well
- Set aside for at least 30mins
- Heat oil in a pan
- Saute the marinated chicken
- Add 1 cup of water, mix well until sauce thickens
- Add the mushroom
- Lastly, add the broccoli
- Serve on top of hot rice

Total expenses: 170P
Good for 8 - 10 servings

Simple Chicken Ala King Recipe

Here's my first attempt at Chicken ala King.

I absolutely love this dish. I'm soo proud I was able to cook it because I don't really know how it's done. It turned out to be really yummy. Enjoy!



1/2 chicken fillet (cut into small pieces)
1 carrot (diced)
4 potatoes (diced)
1 bell pepper
1 small can of mushroom
1 small can of green peas
1 big onion
3 cloves garlic
1 cup chicken broth
small can of Carnation evap milk
1/4 cup of Nestle cream


CHICKEN BROTH:
Boil chicken in 2 cups of water, dash of salt and pepper and 1 small onion

Preparation:
Sautee garlic and onion
Add bell pepper, mushroom and chicken
Season with salt and pepper
Add 1 cup of chicken broth
Simmer for 3mins
Add potatoes and carrots
Add carnation evap and nestle cream
cook for another 3mins or until the veggies are cook

Serve with rice or pasta! Yummy!
