My Favorite Chicken Adobo Recipe

Adobo can be cooked in so many different ways..here i'll show you how i cook my very oen adobo. Very easy to do and very yummy, it's also very pocket friendly! INGREDIENTS: 1/2 kilo of chicken 4 medium sized sweet potato (kamote), cubed and fried 1 onion, diced 1/2 cup of water 6 tbsp soy sauce 3 tbsp vinegar 2 tsp sugar 1-2 pcs laurel leaf Ground pepper PREPARATION: Fry the sweet potato until golden brown, set aside Mix water, soy sauce, vinegar, pepper and sugar in a separate bowl Saute chicken in onion Add in the sauce mixture Cook until sauce is slightly reduced Add in the fried sweet potato Serve hot and enjoy!

Chicken and Pineapple Curry

INGREDIENTS

1/2 kilo of chicken (tinola cut)
1 big can of Carnation evap milk
2 medium sized potatoes, cubed
2 carrots, cubed
1 bell pepper, sliced
1 cup of fresh pineapple, sliced
1 onion, sliced
Garlic 

2-3 tbsp of curry powder
1/2 tsp of chili powder
1/2 tsp of paprika powder
Salt and pepper

PREPARATION

Saute chicken in garlic and onion
Mix curry powder, chili powder and paprika in a separate bowl with a little water
Pour the mixture in the chicken, cook to until the chicken absorbs the flavor
Add carnation evap
Add in the potatoes, carrots and bell pepper
Cook until potatoes are tender
Add in the sliced pineapple
Season with salt and pepper
Serve hot and enjoy!

I wanted to cook chicken galantina actually but I don't have the rest of the ingredients at home...so I just cooked Chicken curry with chili and paprika powder and added some pineapples! It tasted good! My sister approves.

Pineapple Chicken with Sambal Sauce

Here's another pacham I'd like to share...inspired by the korean dish chicken galbi (stir fried chicken). I used sambal sauce instead of hot pepper paste (gochujang). Just finished cooking it a few mins ago...and it tasted good, I think. :) It's sweet and spicy and yummy!

INGREDIENTS
1/2 kilo of chicken, adobo cut
1 small pack of Del Monte pineapple chunk
Onion, Tomato, Garlic
Ginger, grated
Jalapeno chili, sliced

Sauce:
4 tbsp soy sauce
2 tbsp vinegar
1 tbsp sesame oil
1 tbsp brown sugar
1 tbsp honey
1 tbsp sambal sauce

PREPARATION:
Marinate chicken in ginger for at least 30mins to eliminate the smell
Saute chicken in garlic, onion and tomato
Add chillis
Mix all the sauce ingredients in a bowl and mix well
Add the mixed sauce
Allow to cook for 5mins
Add half cup of water
Cook until the sauce is reduced
Add pineapple chunks including the syrup

Serve hot and enjoy!!!

Pork Caldereta Recipe

Here's what I prepared for lunch today...Caldereta! One of my fave Filipino dish. Very very easy to do. Picture to follow.

INGREDIENTS
Pork cubes worth 50pesos
1 small can of Reno liver spread
1 small sachet of Del Monte tomato sauce
1 can of garbanzos
3 medium size potato
1 bell pepper
1 siling haba, sliced without seeds 
1 medium onion
4 garlic cloves
1 Knorr chicken broth cubes
Pepper


PREPARATION
Heat oil in pan, add pork fats, fry until brown and crispy
Saute garlic and onion, then add pork cubes
Add 1.5 cup of water
Add chicken broth cube
Add Reno liver spread and tomato sauce
Wait until the sauce is slightly reduced
Add potatoes, garbanzos, bell pepper and siling haba
Season with pepper
Cook until potatoes are tender

Serve while hot! Enjoy!

Sauteed Chicken and Apple Recipe


Looong timeeee no blog! Well well well...I wasn't really busy these past months, I just don't feel like blogging because no one blogs anymore!!!

Anyway, here's another pacham recipe I'd like to share. First time I tried using apple in a dish. I cooked this last NY at home and it tasted ok (just don't match this with rice). Enjoy!

 
Chicken and Apples

Ingredients:

Chicken breast
Apples (sliced)
Apple juice
Lots of White onion (sliced)
Garlic (chopped)
Thyme
Salt and Pepper
Oil / butter

Saute chicken breast in oil/butter, fry until slightly brown
Add garlic and onion (do not overcook)
Add salt and pepper
Add apple juice (unsweetened)
Add the sliced apple
Add thyme

Vegetable Chowder Recipe

I like this vegetable chowder recipe very much! Perfect during cold weather. I tried cooking it while doing the GM diet  a few weeks back and it really tasted yummy and satisfying. A few of my officemates even asked for the recipe. If you're trying to add more veggies in your diet, try this and you'll love it!

Ingedients:
Butter
2 onions, chopped
1 large bell pepper, chopped
1 cauliflower
1 large carrot, cubed
2 broccolis
2 potatoes
Celery
1 big can Carnation Evap
1/4 cup flour
Salt
Pepper
Chicken cubes
3 cups of water

Preparation:
Blanch cauliflower and broccoli, set aside (2-3mins)
Mix 1 can of carnation and 1/4 cup of flour, set aside
Saute onions and bell pepper in butter (do not overcook)
Add carrots, potatoes (do not overcook)
Add celery
Add 3 cups of water
Add chicken cubes
Add milk/flour mixture
Add blanched cauliflower and broccoli
Add salt and pepper to taste.

Cook in low heat. Serve while hot! Enjoy!!!

Chicken Mushroom With Broccoli

Here's another easy and yummy chicken recipe I'd like to share. I cooked this yesterday and it turned out...edible. Lols. Modesty aside, I think it turned out yummy. It's easy to do, healthy and yes, wont hurt your pocket.

 

Ingredients:
1/2 kilo of Chicken strips / fillet
Broccoli worth 40P (I bought in Quiapo market so it's cheaper)
1 small can of mushroom
Ginger, thinly sliced
Soy sauce
3-4 tbsp Cornstarch

Preparation:

- Blanch or steam your broccoli. I steamed my broccoli along with rice, I just used a steam pan placed on top of my rice cooker, this way it'll be cheaper and easier - no need to boil and drain water. Let it steam for 1 min, then pour cold water on them so they'll retain their perfect green color.
- Marinate chicken strips/fillets in soy sauce and ginger
- Add 2-3 tbsp. of cornstarch on your marinate, blend well
- Set aside for at least 30mins
- Heat oil in a pan
- Saute the marinated chicken
- Add 1 cup of water, mix well until sauce thickens
- Add the mushroom
- Lastly, add the broccoli
- Serve on top of hot rice

Total expenses: 170P
Good for 8 - 10 servings

Easy Chopsuey Recipe


I absolutely love this dish! Very healthy and very easy to prepare. Here's my pacham recipe of this delectable Chinese dish, Chopsuey! Hope you'll like it.

Ingredients:
1/4 kilo of chicken breast, cut into bite size pieces
1/4 kilo of chicken liver
Shrimp, peeled
1 big Cauliflower
Chicharo / Sitsaro
Cabbage
1 whole Carrot, julienne cut
1 big red bell pepper
Garlic and Onion
Fish sauce or salt
2 tsp. Sesame oil
Mix 2 tblsp. cornstarch and water in a separate bowl


Prepearation:
Blanch the cauliflower first, set aside
Sautee garlic and onion, add chicken then the liver
Add 1/2 cup of water, salt or fish sauce to taste
Add cornstarch + water mixture
Add carrots, sitsaro, cabbage, cauliflower and bell pepper
Add 2 tsp. of sesame oil

Chopsuey tastes better when half cooked so make sure to not over cook your veggies. Enjoy!

Shrimp Tempura and Onion Rings Recipe


This is my first attempt at making TEMPURA, and sadly, it failed. For this one, I used a tempura batter mix that I bought at Japan Japan last week while buying Mimi a gift for her birthday. It didn't help that the instructions were written in Japanese so I had to guess how much water to put in the mix. From what I know, cooking tempura requires ice cold water, I did that, but the batter didn't stick well after frying.

I know where I went wrong. The batter was not thick enough and I also forgot to dry the shrimps (by damping paper towel on them) before dipping them on the batter. Nevertheless, it's still yummy.

The remaining batter, I used for onion rings. It wasn't that crispy.  

Few days after, I tried eggplant tempura and I made sure the batter was thick enough to hold them together. Guess what!? It's still not perfect :( Moral of the story is, before buying tempura batter mix, make sure you understand the instructions at the back!

Maybe, I should just try homemade batter next time.

How To Cook Tikoy


How do you like your TIKOY done?

For years, I always cook Tikoy in old fashion way - dipped in egg then fried. Yummy but the taste is a bit boring, right? So last Chinese NY, I decided to reinvent the tikoy I received from Jun (Ruthie's bf) and came up with Lumping Tikoy.

Ingredients:
New Echague Bakery Tikoy (the best tikoy in town)
Kraft Eden Cheese

Preparation:
Cut tikoy into 4 parts then thin slices (about 2-3 inches long, 1/8inch thick)
Cut cheese into thin long strips
Roll tikoy with cheese in lumpia sheets/spring roll
Deep fry
Serve hot

This tastes really really good. Sweet, sticky, crunchy and cheesy! You can also use langka, Nutella chocolate spread, cheezwiz, peanut batter and strawberry jam instead of cheese. The next day, I dipped the remaining tikoy with Pillsbury hotcake batter then fried it...and it tasted equally good!
